Gluten-free burgers with lentils and broccoli
I make Burgers once in a while and today is the next edition. They are easy to prepare – you have to grind the main ingredients, cook broccoli and ready. If you have lentil flour, rice and ground flaxseed, you do not even have to grind. Simple and fast, and then just bake.
These lentil and broccoli burgers are a great option for lunch or dinner, but I also encourage you to bring a burger to school or work with a decent portion of a salad with green-leaf plants. I also like to eat dry meals for breakfast.
What you need?
To prepare such burgers from lentils and broccoli will be necessary steam pot or just a plain, larger pot with a lid and a colander.
You can also use a robot / blender to crush boiled broccoli, but you can also just chop it very finely. Blender is also useful for tomatoes.
Useful equipment for grinding rice, lentils and linseed (if you already have ground products, you do not need to grind anything). Even an ordinary coffee grinder can do it, although it lasts.
Do not forget about the oven and baking tray lined with baking paper.
Gluten free lentil and broccoli burgers – ingredients:
1 fresh broccoli (360 g ;,
150 g red lentils (about 0.5 glasses) – you can also use ready-made lentil flour,
120 g of rice (about 0.5 cup) – you can also use ready-made rice flour,
260 g tomatoes (4 small pieces for me),
2 tablespoons linseed,
3 tablespoons of yeast flakes (read what yeast flakes are),
0.5 cups of vegetable milk (I used soy milk fortified with calcium, no added sugar),
2 teaspoons of oil that can withstand high temperatures (eg coconut) + a little bit to grease the baking paper,
1 clove of garlic,
herbs and spices: 1 teaspoon of savory garden, marjoram, basil, salt and pepper to taste. Of course you can use your favorite spices.
Gluten free lentil and broccoli burgers – preparation:
Boil the broccoli for 6 minutes. Cool and shred with a robot / blender or finely chopped.
Lentil, rice, ground to a flour and pour into a bowl.
Tomatoes burn, remove the crust and blend them together with fat, garlic and spices and yeast flakes.
Mix all the ingredients in the bowl with you – preferably make the “cake” with your hand.
Baste the baking paper gently with grease. Form burgers and put on paper.
Bake at 200 degrees for 35 minutes. After 20 minutes, turn over to the other side.
Serve with lots of vegetables. Bon Appetit!
